Where can I ask client to pay 20% gratuity added to all bar sales?

I let people know in the listing that there’s a bar and gratuity guarantee when a private party room is booked. It’s done separately from Peerspace because most of the time the person booking isn’t also paying for the drinks, and it’s something I clarify when we finalize. I don’t know that there’s a way to not have Peerspace take their percentage with something like a gratuity if beverage purchases are included in the cost of the booking, so I just don’t include that in the booking itself. What people spend on drinks is too random to work within the parameters of this platform.

Thanks Amy! I generally have a 20% minimum guarantee in my rental contracts, but how can I enforce that by just telling the client? Do you also have a bar sales guarantee based on the amount of people attending…just curious.

Hey Ruth - Peerspace seems to have stopped sending me notifications, so sorry I missed this!

I do have both a bar and gratuity guarantee. I make sure people understand clearly what that means (remarkable how many people don’t actually hear the tip guarantee part!), and let them know we’ll be collecting a credit card and ID at the start of the party against the guarantees. We take the ID as people might skip on the credit card, but they do want the ID back.

What the guarantees are depends on a lot of factors, but I know how many people the rooms I list hold, and the minimum amount that number of people are likely to drink during the course of four hours. So with the room that holds 50 to 60, it’s a $1,500/20% bar and gratuity guarantee, the larger one with 70 to 80 is $2,000/20%. We usually make more than the minimum, but at least it’s a base we can live with, and it’s very competitive, which helps us book more parties.

We keep people apprised of their numbers a couple of times during the night, so they can encourage additional drinking if things are moving slowly. Usually not till after the first two hours or so, as it takes time to build momentum.
