We get requests for parties that want to run past midnight. Lately, the requests have been for parties that run past 2 am. We want to accommodate them but charge a surcharge for the late hours’ clean-up and the risk.

Try adjusting “calendar pricing” in the pricing section. You can set your rate to automatically increase depending on time-of-day and day-of-week. You can also set it to change based on guest count.
We have our event venues set to increase by 50% on Fridays and Saturdays and also have the rate increase by about 30% for every 30 additional guests.

I totally understand wanting to be accommodating, but I have discovered it’s just not worth it at my venue. Of course, yours could be totally different. But I have found when parties want to stay past 11 pm they do more damage and do a horrible job with clean-up. I have just found it’s not worth it. We have a 11 pm cut-off. Each space is different, but it’s working for us. The party crowd can find somewhere else to go. I’ll take the low-key wedding showers and birthday parties all day long. 
Just my 2 cents. Hope you find the right cut-off for you and your venue.
